You Gotta Try This #StonyfieldGreek {Super Fruity Banana Bread Recipe!}

Last week, I came home to a HUGE box of Stonyfield Greek yogurt on my doorstep.  Although I was excited, I think Gabby was even more so.  I'm all about sharing, but the new flavor Cafe Latte was ALL MINE.  The twins love cherry, so I let them try out the new Black Cherry flavor.  Both are super tasty! I ate my Cafe Latte with some mini chocolate chips as a mid-morning snack. 

You've gotta try these new flavors! Aside from the two newbies, they have also enhanced the fan favorite flavors: strawberry, super fruit and blueberry. 

We are trying to be a little greener this year.  Our budget doesn't allow us to buy all organic/GMO free, but we do what we can.  What I love about Stonyfield yogurt is there are always sales AND coupons...it makes this tasty yogurt affordable!  I like Greek yogurt for breakfast and the girls prefer the regular tubs of yogurt, especially the French Vanilla or Banilla flavors.

You know what else is great to do with Greek yogurt? Make banana bread!  I altered my go-to recipe a bit to try out some coconut oil I have been experimenting with.  (I'm totally loving it so far...from stir fry to baking, it's been amazing!)

For this variety of banana bread, the twins wanted to use the Super Fruit Greek flavor in it.  It gives it a subtle berry flavor...the girls said it gave them "Super Girl powers".  I also used coconut oil and pumpkin instead of butter to lighten it up.  This recipe is very versatile, you can add whatever flavor Greek Yogurt you want.  The Black Cherry would be ah-mazing with some mini chips!

Here's what you need:
  •  1 cup sugar
  • 1/2 cup pumpkin puree
  • 1/4 cup coconut oil
  • 2 eggs (or 1/2 cup Egg Beaters)
  • 1 teaspoon vanilla extract
  • 1.5 cups flour
  • 1/2 cup oatmeal
  • 1/4 cup flax seed (optional)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 (6 oz) Stonyfield Super Fruit Greek yogurt cup
  • 2-3 brown bananas, sliced or mashed
  • Optional: raw sugar to sprinkle on top before baking
Let's Bake!
  1.  Preheat the oven to 350.
  2. In a mixer, combine sugar, pumpkin and coconut oil. Add eggs, one at a time, then vanilla.
  3. In a small bowl (I use an old quart yogurt container!), add flour, oatmeal, flax, baking soda, salt and cinnamon. Stir together and slowly add to wet ingredients. 
  4. Add yogurt and bananas.  Mix together for about 1 minute.
  5. Pour into 1 bread pan or 4 mini loaf pans.  Bake for 45-60 minutes.  It depends on your oven! For a crunchy top, sprinkle with raw sugar before baking!

Smoothie time! Very berry mango

When I first heard of the Magic Bullet, it was when I was pregnant with the twins.  I would be up at odd hours of the night with heartburn, a desire to eat the entire freezer or a baby (or two) kicking my bladder.  Basically, I turned into a night owl.  I became obsessed with infomercials since there is nothing else on at 3 am.  The Magic Bullet was my favorite.  I'm pretty sure the same commercial is still on 3 years later.  I always wanted one, but figured since I have a blender, it was pointless.

January 2009- I was VERY ready for the twins to be born!  They finally had to induce me in February!


Flash forward to last week, I finally received a Magic Bullet as part of a gift bag.  Since then, I cannot believe I have lived without one.  The Magic Bullet chops, blends and mixes everything!  I absolutely love that there are so many different attachment cups so that I can do all my chopping jobs at once.  I'm pretty obsessed here!

Best part?  It makes smoothies.  It comes with 4 mugs, so everyone in the family can have one.  Well, Gabby takes sips of mine.  We each like different ingredients in our smoothies, so we can mix them all up quickly and still have our favorites.

The girls love to help me add fruit to their cups and pour the milk.  It's a great way to teach them how to measure and whatnot.

We have many favorite combos, but here is our top one right now!  It has been named Very Berry Mango.  It is pretty, pretty, pretty good. (Like my Curb Your Enthusiasm reference?).


Here's what you need.  This is portioned for one Magic Bullet cup.  Multiply for a regular blender!

  • 1/3 cup yogurt.  I adore Stonyfield Banilla.  Here's a coupon to try it.
  • 1/2 banana, frozen or fresh
  • 1/3 cup blueberries
  • 1-2 whole strawberries
  • 3-5 raspberries
  • 1/3 cup mango, frozen or fresh
  • 1/3 vanilla almond milk
  • 1 tablespoon flax (not needed, but I like to add extra fiber where I can!)
  • 2 ice cubes
Mix it up!  

You might need to add a bit more milk or a splash of water to get it going. 

I don't know how those little bellies drink those big cups!

Quick tip: what to do with markdown bananas

Do you ever see these in the grocery store? They are almost always available!

A lot of times, with markdown fruit you don't know what to do.  Most people assume the bananas inside the yucky peels are bruised, but for the most part they are perfectly fine!

What do you do with them?  Peel and freeze for smoothies, breads and other recipes.  You can save a ton of money this way!  I am addicted to frozen bananas in smoothies because they have a much creamier texture.

Other great items to pick up on markdown: meat, yogurt, zucchini, spinach/lettuce, mangoes, berries, potatoes and onions.

I peel and freeze them like this.  If they are flat like this, they barely take up freezer space.  Just take one banana out when you need it!
