Mmm Monday: Cast Iron Chicken Pot Pie

I've tried quite a few chicken pot pie recipes. In the winter, there is nothing better than a nice warm pot pie.  

In the summer, as much as I hate heating up the kitchen with a hot oven, I make pot pie at least once a month.  Since it is cloudy and a bit chilly today, this would be perfect!

My favorite recipe? Good old Pillsbury Cookbook version. It's easy to doctor up with some good roasted chicken leftovers and extra veggies (asparagus! mushrooms!). 

 As much as I would love to say I have a great pie dough recipe, I just use plain old store bought from Aldi.  


Look at that photo! It looks pretty fancy still!  The cast iron pot is perfect: it goes from the stove to the oven! No mess to be made. 

(Whenever I use my cast iron pan I think of Tangled and I always wonder how she swings it around with such ease.  Yes, I know she is a fictional Disney princess...)

I'll give you my version of the recipe, I've made a few changes over the years.

Ingredients
1 box of pie dough (I only use one sheet to save calories)
2 tablespoons butter
1/3 cup chopped onion
1/3 cup flour
Salt & pepper, to taste (I also like to add Perfect Pinch Savory blend)
1 chicken bouillon cube
2 cups low sodium chicken stock
1/2 cup milk
3 cups shredded chicken (about 2 large boneless breasts)
2 cups frozen veggies (I like the peas & carrot mix and I'll throw in leftover veggies)
Egg whites to brush on crust

1. Heat oven to 400*.  Make sure pie crust is defrosted.
2. In a cast iron pan, heat butter over medium heat.  Add onion and cook for 2-3 minutes.
     -you can do this in a normal pan and transfer to a pie pan or 8x8 square-
3. Stir in flour and season with salt and pepper.
4. Slowly pour in milk and stock, making sure to stir well to prevent clumps. Sometimes I add more stock.  Add bouillon cube and dissolve.
5. Stir in veggies and chicken and bring to a low bubble.
6. Cover with crust.  I liked a more rustic look, so I didn't perfect it.  Brush with egg whites.
7. Bake for 30-35 minutes, or until crust is brown. Let stand for 10 minutes.

My weight loss journey [Fitbit review]

I have been doing Weight Watchers for a couple of months now.  I wish I could say the pounds are melting off, but I've finally gotten past the 10 pounds lost mark.  I really don't eat too badly, so it gets frustrating when I feel like I should be losing faster.  

Every week I see people at my meetings who the Weight Watchers program really works great for, but I get frustrated with the points system.  I like to see real numbers, I actually tend to use the free app My Fitness Pal more. 

One thing I have been trying to focus on is working out.  I really love our local YMCA and there are a few branches we can visit.  The downtown location is right by Ricky's work so we can meet him when he's done for the farmers market on Thursdays.

Our main location is the Spartan branch (if you go there, I would love a workout buddy!).  The girls love the play area and I enjoy the "me" time.  I tend to stick to the cardio machines and classes and I was getting frustrated with my pedometer.  I felt like I wanted something to tell me how many calories I was burning, as well as how many steps. It's really hard for a pedometer to actually pick up on steps taken in a class since you aren't always moving forward, but also side to side. 


After doing some research, I decided I wanted a Fitbit. There are 3 varieties, but I chose the simplest to get me started: the zip. From taking surveys, I had some Amazon money saved up...it was perfect timing!  

Weight Watchers has a fitness tracker, but I decided against it for a few reasons:
1. I could never resell it if I didn't like it or wasn't in WW anymore (it is a one person device)
2. There is a $5 monthly fee to use it
3. It had very mixed reviews, mostly negative

I've had it since Mothers Day and I am obsessed with it! I clip it to my bra and it updates information to my phone, Fitness Pal and other devices.

Once you are done with your workout, it will tell you exactly how many calories you've burned, along with your steps. I was always skeptical with the readings on the machines I used and I had every right to be! My calorie burn is usually 100-150 MORE than the machine says! That adds up!

I aim for 10k steps a day, it is such a great motivator!

What the heck is: Jicama?



A few weeks ago I did a little game on Facebook and Instagram asking what the item was below was.  It took a few hours for someone to guess correctly.  Believe me, not long ago I would have no clue what jicama was either! 


I have been experimenting with new fruits and veggies lately.  I love searching the grocery store with the girls for new items to try.  We don't have a huge selection of new items here in Michigan, but it's a fun game for the twins! 

I'm a girl who loves crunchy food.  Also, I'm a dipper.  Being on Weight Watchers, it's hard to find a dipper that doesn't take up my daily snack allowance.  (I do love the Special K cracker chips though!!). You can only eat so many carrot sticks!  

Jicama is a perfect addition to salads and crudités.  I like to cut it into matchsticks for dipping, or I'll shred it for salads and slaw.

The best way to cut it is to slice off both ends and to peel it with a pairing knife or peeler.  I like to squeeze some lime juice on it. At first, you have to get used to the starchy texture.  Keep eating it, though! 

Here's my favorite Jicama Slaw recipe.  It's great with BBQ or fish tacos.

Ingredients
*1 cup shredded jicama
*1 cup shredded carrot
*1 cup shredded red cabbage
*1/2 red pepper, diced
*4 green onions, sliced thinly
*Added kick: 1 thinly sliced jalapeño 

Dressing (whisk together)
*Juice of 2 limes
*1 teaspoon agave nectar (or honey)
*salt & pepper to taste
*1/2 teaspoon cumin
*2 tablespoons cilantro, chopped

Toss it all together and chill for at least 30 minutes!

5 tips for a blogging conference newbie

Earlier this month, I was lucky enough to attend my first BlogHer Food conference (complete recap is coming up soon!).  The food conference is a downsized version of the large conference set to hit Chicago in July.  Sadly, I cannot attend because we have a wedding.  Since my goal is to write a cookbook, I thought I should start learning more about being a foodie blogger.  I really enjoyed the smaller size of the conference. 

Although I've been to another conference before, this was my first BlogHer brand one.  Here are my best tips for a newbie.

1. Be comfortable.

I know everyone says bring comfy shoes, but being comfortable goes way beyond that!  Make sure you aren't packing clothes that you are fussing with or generally not comfortable in.  Also consider where the conference is taking place.  Bring cardigans because those conference rooms can be chilly! 

The first event, I saw this girl who was trying to walk in these 5 inch platform wedges in a strapless dress.  She was fussing trying to keep her dress up all night and her feet were turning bright red.  Later that night, I spotted her barefoot.  While you are networking, do you want to be uncomfortable? No way Jose!

If the event is in the summer, pack cute flats or sandals that you have worn before.  If you are a pro at walking all day (and night!) in wedges, go for it!  In my opinion, I would say flip-flops are a no-no. For night events, it may be okay, but you do want to remember that you are making professional connections!

The last night of BlogHer Food I made the mistake of wearing a tank top I don't wear much and I was fixing it all night.  I learned my lesson!

2. Look like yourself.

This may seem like a strange tip, but I was shocked at how many people looked totally different from their online personas.  I completely understand not liking to have your photo taken, but try to keep a semi up-to-date one!  After meeting you, people will be trying to connect with you on Twitter, etc and it makes it so much easier if they can recognize who you are!  Vice versa: if you go to follow someone and they don't recognize you, they might just ignore you.  Don't miss out on that potential network!

While you are at the conference, I really don't think you need to be all dolled up.  Like I said before, though, if you normally wear makeup like the Kardashians, then go for it!  BlogHer Food was in Texas and it was HOT.  All of that makeup looks okay inside, but once we had outdoor events I saw people with their faces like melting off.  Not a good look!

3. Make unique business cards.

My cards are bright pink, green and very simple.  At first, I was kind of scared to hand them out.  But people remembered them!  Also, think about adding a QR code that links to your "About Me" section of your website.  Don't have an "About Me" section?  You better go make one, girl(boy)friend!  That is the first place people turn to on your page.

Also remember to hand your cards out to everyone! I kept my box in my bag, but about 25 cards behind my nametag.  When I met someone, I could easily grab one.  For a smaller conference, prepare for about 250 cards, for a large one you should bring at least 750!  Remember you are handing them out to both brands and other bloggers!  I have printed from UPrinting and Moo, both have turned out great! (Also, make sure you order through Ebates to get % of that cash you're spending back!)

There is a great free business card app (CamCard) which scans the cards and keeps them in your phone.  While I don't use this for everyone, I do scan people I really want to keep information close.  My business cards tend to become toys when I come home if I don't keep them up high!

4. Take notes after meeting people
After you're done chatting with someone, take quick notes on their cards.  I love those tiny post-its for double sided cards.  This is especially important when you're talking to a brand.  Their marketing rep may be from a different company, so be sure to write who you were talking with.  As much as you would like to give yourself the benefit of the doubt, remember that you have at least 2 days of networking! 
 



5. Don't break the bank with a new wardrobe!
Everyone wants to look cute, but don't spend out of your budget.  I found plenty of cute clothes at Target and Kohls, using coupons I spent next to nothing.  My most complimented shirt was a blouse I got at Target for $3.98!  I think if you stick with basic, classic bottoms and go for colorful tops you'll look great!  Also, find some cute dresses and accessorize with fun jewelry.  Most people are drawn to a great necklace or earrings. 

Extra tip: apply to volunteer!
 
Both conferences I've been to, I was lucky enough to be a volunteer.  If you ever are considering a conference, keep your eyes peeled in the emails for the opportunity to volunteer.  You get a free ticket for just a few hours of volunteer work.  Both times, I've been at the registration desk and I loved it!  You get to meet people right away and most people will recognize you throughout the conference as the first face they've met.

This weekend I was a lucky gal! I got paid to go shopping for some Kraft items at Walmart.  When I saw this opportunity, I jumped on the chance because we fly through our boxes of Capri Sun in the summer. 

Usually in the morning, we head to the local YMCA and I make sure to pack snacks.  Most of my classes start at 10-10:30, so by 12:00 when I'm done the girls are ready for lunch!  To hold them over, they get a juice and another small snack.  With this hot weather, I throw a box of Capri Suns in the freezer and take them out before we leave.  By the time we are leaving the Y, they are cold treats to cool off the ladies after an hour or so of playing!

*Another tip: use the frozen Capri Suns for ice packs on a picnic!*

My girls don't drink much juice, so we prefer the Roaring Waters variety.  They also offer 100% juice flavors, which I really like.  For the girls it seems like a special treat and I know they aren't getting pumped up with too much sugar before naptime!

Before heading on my shopping trip, I checked out the Walmart site to print off some coupons!

Did you know that you can print coupons from the Walmart site?  They have some exclusive coupons that other sites don't have. 

I will admit, I was not a huge fan of our local Walmart.  They were very outdated and I could never find anything I needed.  When I pulled up, I was thinking "Oh great!" when I saw construction. 



While browsing, I was pleasantly surprised by what I saw and found.  The prices cannot be beat, that's for sure!  They had a lot of things I have could not find at other stores, like 4T play shorts...and for $3! 


Head on over to Walmart for play shorts and tanks...only $3-$3.88!  Totally not a budget breaker!

Once the construction is done, I will be sure to add Walmart to my shopping loop!

Since we mostly cook at home, I feel like I do dishes ALL.DAY.LONG!  In reality, I do!  As much as I try to load up the dishwasher, we still end up running it at least 2 times a day.  Ugh!

Back in the day, watching Jon & Kate Plus Eight, I would get SO annoyed when she used paper plates.  Now as a Mom, I get it.  I can't imagine the dish load with a family of 10!

I love to try all brands and being a coupon user I am not generally brand loyal.  Some things you can't go cheap on, though!  Dish detergent is one! (Ketchup is the other...but that's a whole different story...).

I've tried store brands and they all left streaks or I would have to run half of the dishes again. We also had a period where we had these strange grainy things left on our dishes.  I was actually considering buying a new dishwasher after we moved into our house because nothing would come clean.  Shopping at Target one day, I found a great deal on clearance Cascade action pacs so we switched from Finish. After one load it became clear: our dishwasher worked fine, it was the detergent!  We found out that we have hard water and some detergents don’t work well with that.

Now we are brand loyal to Cascade.  I love the action pacs and it's Olivia's "job" to put it in the dishwasher.  She is obsessed with how they look and I have to remind Gabby daily that they aren’t candy.  I love that no matter who loads the dishwasher, everything comes clean.

(Ricky, I love you, but I do NOT understand how you load the dishwasher...).

Now that I’m a semi-foodie blogger, I need my dishes to look delicious.  I am so happy we chose to register for white plates last year, everything looks so tasty and the colors really pop.  Cascade Platinum has partnered with Gail Simmons from Top Chef (dont you love her?!).  She speaks about the importance of presentation, which I learned a LOT about last weekend at BlogHer Food.  People definitely also eat with their eyes!

Another perk of using Cascade?  The amazing smell when the dishes are drying.  We had the fresh scent and after the dishes ran the kitchen smelled so clean.  Also, it helps keep the inside of the dishwasher deodorized and sanitized.  Bonus!

Garden time: 2013 {Some tips I've learned}

It's officially warm weather!  Woohoo!  I'm so excited because we have been cooped up for so long!  Only problem with warm weather: huge mess outside, huge mess inside.  Also, the neighbor kids are swarming since we have a brand new play set up.  (That's a whole separate topic...)

This will be our third year of gardening.  I am hoping this year is a winner.  Quick recap: First year: we were in our apartment and tried those hanging planters.  Our upstairs neighbor decided to sabotage all attempts of growing by throwing toxic water off of his balcony daily.  Last year: drought = dead plants.  I cannot say that I haven't tried!

So what do I do when I become obsessed with a topic? Check out books from the library and scan Pinterest.  Ricky always makes fun of me because I check out 10 books at a time and skim them all.  When we started planning the wedding I DVR'd every wedding show and checked out every book.  (I also have an issue with reading books that have been made into movies).  

From all of this research I have learned some great tips for building a (hopefully) successful garden.

Here's my favorite tips:
(If my garden crashes and burns this year, I'll blame Pinterest)
  1.  Save egg shells to help nourish your soil.  I kept them in a bag, crushed them up and dried them at 200 in the oven for about 45 minutes.
  2. Before laying down your soil, place 3-4 layers of newspaper to help keep out weeds.  I sprayed each layer with the hose between to help it from blowing away.
  3.  Before planting your tomato plants, put a banana peel in the ground with some extra egg shells.  
    • Also, make sure you put your cages around your tomatoes when you plant them NOT later as they grow.  Learned that the hard way last year!!
  4. Keep mint away from EVERYTHING.  It spreads like wildfire.  
  5. Compost! It's a super easy way to feed your garden.  We throw everything in a bowl during the day and then take it out to the compost at night.  We use an open tub with holes cut in the bottom (to help drain water).  We aren't' perfect at it yet (I forget to turn it), but it seems to really help our soil!
    • There are many lists online which go over what items work.  One word of advice: no pits and break up citrus peels.
I am NO expert, so any tips are much appreciated!
