I must admit, we haven't gotten any gift certificates from Restaurant.com in quite some time because we have been so busy.  Today (Thursday 9/29) they have 90% off!  I am going to have to check this out... Ricky and I are in need of a real date night!

What is also great is there is NO promo code to remember!

You better go fast and check it out.  My favorite for the Grand Rapids area so far is Olive's.  Super cute place with AMAZING food.  Plus there is a great ice cream place right next door and little shops to browse after the meal.

Quick tip: if you are planning on traveling, buy some for the area for a cheap dinner!  I always go to yelp.com for some reviews before buying any, but remember usually people who have a BAD experience write on there.  I have loved many places that have bad reviews!

Since I am staying home with the little ladies right now, I don't have the extra income I had when we were in Wisconsin.  I am so fortunate to be able to spend time with my kids...Ricky works his tushie off for us!

For extra money, I take surveys online.  Although I don't make a ton of money, I earn rewards like gift cards and I sample tons of products.  It was funny when we were moving because I have so many products in plain white boxes or bottles.  All sample items!

If you are interested in doing surveys, here is a list of my favorite.  I can give you tons of advice if you need it!  I've been doing this for over 10 years now!

My new favorite site is Focus Forward.  I don't take a ton of regular surveys from them, but they have amazing focus groups that pay a LOT!  One was an online video chat (45 minutes) for over $100!  Their Twitter page has a lot of extra groups you can sign up for.  Make sure you give them a valid phone number to call.  Although you may not qualify for every study you apply for, its worth it to try!  What a nice way to save up some extra cash for the holiday season! 

Quick note: NEVER, ever sign up for a survey site that makes you PAY to join!  Those are scams!

Date night?

If you are a parent, you know that the phrase "date night" is kind of like a myth.  You know they exist, but it has been so long since you've had one, you aren't really sure if they are real.
To us, a rare date night is a dinner where we struggle to not talk about our kids.  Yes, we have many other topics to talk about, but our lives revolve around bottles, potty training and whatever crazy thing the twins have done that day.
When I heard about Friday's freezer meals, I was excited to try them because we used to frequent Fridays B.C. (before children) because we love their Happy Hour deals.   Plus, their food is always super tasty.  Since life is pretty hectic with the big house move, I decided to have a date night at home in our new kitchen.
There were so many options available (and they were on SALE!), so I picked up two: the Cajun alfredo pasta and the chicken fajitas.  Plus, we were starving!  I knew we couldn't split just one.
(The meals actually look a lot like they do in the restaurant…I was shocked!)


I added a bit of sour cream and cheese for the fajitas and we were all set.  Everything was super tasty.  Ricky ate a majority of the meals, since I made a salad as well, and he was actually full afterwards.  (If you know Ricky, you know he can eat a seven egg omelet and still be hungry chow).

Recipe: Chicken fajita pizza

In our house, we have established a "pizza Friday".  We make pizzas and watch a movie.  Now that Ricky has a new job, it's nice to have him around for the movie night too!  I had a ton of leftover chicken last week and I accidentally made this amazing pizza.  Don't you love when that happens?!  The best part of this is most items are always stocked in the fridge or pantry. 

Notice the pizza was half gone by the time I snapped the pic.  I was HUNGRY!



Ingredients
  • 1.5 cups leftover chicken, sliced or shredded
  • 1 bell pepper, any color, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 package of 4 cheese Mexican (or I did 1 cup Co-jack + 1 cup pepper jack)
  • 1 packet of Fajita seasoning, splash of water or stock
  • 1 cup salsa (more or less for taste)
  • 1 container of pizza dough (I love the Meijer brand, its super crispy!)
  • Optional toppings: green onion & cilantro
Directions
  1. Preheat oven @ 400.  Reheat chicken in microwave for about 1 minute.  Add a splash of water/stock and fajita seasoning.  I did not use the whole packet, just eyeball how much you want.  Add more water/stock if necessary.
  2. Spread out dough.  Add salsa as the pizza sauce.  Top with peppers, onions and chicken.  Spread cheese evenly and bake for 10-15 minutes.  After baking, top with green onion & cilantro, if wanted.
SO easy and delish!

We made this pizza and a BBQ chicken pizza.  Great way to use up leftovers and a switch up from plain pepperoni pizza.
