Disney On Ice: Passport to Adventure in Grand Rapids! #DisneyOnIceInsider

The time has finally come- Disney on Ice  Passport to Adventure is in Grand Rapids!  My girls have been so excited about this event all year--every morning they would ask "Is today Disney on Ice day?".

Passport to Adventure follows Mickey, Minnie, Daisy, Donald and Goofy on an adventure around the world.

First, they head to the jungle to visit Simba and the Lion King gang.  My favorite was the next adventure under the sea with Little Mermaid.  Warning: the large Ursula was a bit scary for Gabby, but a quick reminder that it's all make believe helped.

Next, the gang was in Hawaii with Lilo and Stitch! Gabby loved the hula dancers and Elvis music! The intermission was a perfect chance to stretch and take a bathroom break.  It lasts about 15 minutes, so you have plenty of time.

The final trip was to London with Peter Pan and Tinkerbell.  The girls absolutely LOVED the flying and Captain Hook.

Each trip has many of your favorite Disney songs and amazing ice skating.  I don't know how they do those tricks in those costumes!  The girls oooh-ed and ahhh-ed many times. We had a wonderful adventure with the Disney gang and three tired little ladies on the way home.  I truly love how Disney on Ice helps create memories for our family. During the show, they encourage you to sing and dance along with your favorite characters--I even caught Ricky singing along.

Quick Tips:
  • The show is almost 2 hours, with one intermission.  Be sure to eat and make a bathroom trip BEFOREHAND.  
  • The snacks and treats can get expensive.  Popcorn was $4 each and lasted the whole show.  Get a water, though--it's quite salty! 
  • Bring gum.  It quenches thirst, but doesn't fill up the bladder!
  • Dress in layers.  The ladies had their princess dresses on, with long leggings and shirts underneath.  It's not super cold, but I was glad I had my scarf on!
  • Consider wearing costumes to make it special.  Even Minnie ears are fun!  I felt the costumes also distracted the girls from wanting to buy all of the expensive souvenirs! I saw some fun Disney crowns and costume accessories in the Dollar Spot at Target. 
  • Seat placement isn't really an issue. You can see well from all areas of the venue! We were up on the balcony area and it was perfect!


Disney on Ice Passport to Adventure will be here in Grand Rapids this weekend.  There are still tickets left, if interested!

This year Stonyfield's YoBaby turns 16! All of my girls started with YoBaby when they were little. It's crazy to look at them now and remember them being that small!  Everyone seems to be growing up so fast and I'm trying to cherish every moment, especially with Gabby since she is my last little one.

When Gabby was younger, we entered a Stonyfield contest and she was the YoBaby of the week! We got this super cute (empty) YoBaby package with her cute little face on it.  I'm trying to keep it in great condition, but as you can see--the corner is already missing.  It's such a great memory for us to have!  She used to gobble up the YoBaby blueberry.  Now she loves the YoKids pouches--it's her special treat for being so patient with me at the grocery store.  Shopping with just her while the twins are at school is SO much easier!

The twins have done ballet and soccer throughout the last few years and it was time for Gabby to take a class at the YMCA.  She chose ballet and couldn't be any cuter in her little outfit.  Being that she is quite a bit larger than the twins were when they started, she got ALL NEW ballet gear, which is huge for Gabby--she gets mostly hand-me-downs.  I swear she will be bigger than the twins by the time she starts kindergarten!

Monday morning, she was up bright and early to prepare for her ballet class--it was too cute! I gave her a little backpack to put her leg warmers and shoes in, plus she insisted on a banana and Absopure Packables water. She was all set to go!  I tried to sneak some photos without her seeing me.

Sweetheart Dance, Twins, Being Cheap is Easy

Last weekend the twins had a big milestone: their first dance! At our school the Daddy Daughter Dance is called the Sweetheart Dance.  I found some super cute spring dresses that we can also use for Easter and any summer weddings at Kmart and I turned the bathroom into a little salon to do their hair.  Since I have super curly hair, it was a learning experience using a curling iron! I'm so clueless when it comes to straight-ish hair!  I think I did a good job though, they were SO happy!  Olivia looked at InStyle while I was doing her hair and Maddie snapped selfies.  When did they grow up!

Ricky took them out to eat beforehand and they were so excited.  Maybe a bit TOO excited, since Olivia threw up during the first half of the dance from running around. YIKES!  Gabby was devastated that she didn't get to go, so we had a Mommy date to Noodles and a movie.

I love how we can enjoy Stonyfield at all stages of our lives- from YoBaby to YoKids to their Greek yogurt.  As we incorporate more organic foods into our food budget, Stonyfield dairy is always at the top of our list.  They are an affordable way for us to take care of our little ones--I can trust there is only the good stuff inside!

#PizzaFriday: Spinach + Artichoke Flatbread

Anyone use the TimeHop app?  It shows you what you were doing the same day in years past.  Every morning I love to check it.  It's funny because usually I'm doing the same thing--the last 4 years we've been sick on the same days and I find I even serve the same meals on the same days!

Today's TimeHop showed pictures of this recipe from 5 years ago--it's my favorite go-to flatbread.  You can make your own crust or buy one from the store.  I love Aldi's thin pizza crust or flatbread from the grocery store.  They are usually pretty inexpensive!

Pizza Friday is a new tradition we've started since the twins started school.  We like to spend Friday nights unwinding and just spending quality time together.  During pizza night, we like to pick out  a new movie from the library or play some new games.  Usually the girls are super tired from the week and end up crashing by 8:00, so Ricky and I have a date night at home, too!  Win-win!

While it's easy to order pizza delivery for convenience, if you keep a few pizza staples in your pantry, you can make one at home much faster!  We get thin crust 2-packs at Aldi (around $3!) and keep our favorite toppings on hand.  Usually, the girls want pepperoni + sausage or Hawaiian and then we like to experiment for ours.  (Somehow the three girls polish off a pizza of their own! Where they put this food is beyond me!)

I usually make a pizza that's heavy on veggies with a sprinkle of meat, while Ricky puts ONLY meat on his.  It's fun to come up with crazy combinations or use up leftovers!  A few weeks ago I used fajita veggies and pulled pork.  Ricky made a chorizo and pesto one with an egg on top.


This spinach + artichoke pizza is my go-to.  I like that there's no greasy meat and it's super simple to throw together. If you're hosting a party, this slices up well for an appetizer, too!  You can add grilled chicken for extra protein, too!  This recipe originated from Rachael Ray Magazine, but I've changed it a bit over the years to make it my own.

Spinach + Artichoke Flatbread

Here's what you need:
  • Favorite pizza crust or flatbread
  • 1 cup cherry tomatoes, sliced in half if large
  • 1 small jar of artichokes, drained and sliced
  • 3 handfuls of fresh spinach
  • 1 drizzle of EVOO (about 1 teaspoon)
  • 1 teaspoon favorite Italian seasoning
  • 2-3 tablespoons pesto sauce (we love the Kirkland one at Costco)
  • 2 tablespoons Parmesan cheese (Separated)
  • 2 cups Italian blend cheese 
  1. Preheat oven to 425. 
  2. In a small bowl, combine spinach, artichokes and tomatoes.  Add drizzle of EVOO and Italian seasoning.  Sprinkle with 1 tablespoon Parmesan. Set aside.
  3. On the flatbread or pizza crust, spread Pesto sauce.  Sprinkle with remaining Parmesan cheese. 
  4. Evenly spread the spinach mixture on top of the crust and top with cheese.  I usually use less than 2 cups of cheese.
  5. Bake for 10-12 minutes, until golden brown on top.

After Christmas, I took my gift money and bought a video camera.  We have a super old one that still used a VHS tape to view and I figured it was time to upgrade!  I did a bit of research and found a Sony one I loved.  When I hit up Best Buy, there was an open box of the ONE I WANTED.  Score!  Instead of $150, it was $85!  I am really loving it so far: super light and so easy to upload to the laptop. 

I also have a goal to start doing videos for this site.  Now it's February and I've FINALLY done my first video.  Baby steps!  I am still learning and playing around with the editing program, so keep that in mind!  Check it out:

Smoky n' Sweet Turkey Chili {Plus a Hamilton Beach #Giveaway!}

We are in day EIGHT of an awful flu bug going around the house.  Needless to say: I'm going CRAZY!  It started with coughs with runny noses and now we have a round of "let's throw up on everything".  I feel so bad for my little ladies!  Fingers crossed it doesn't come my way...

During the winter months (aka flu season around here...) I tend to make tons of soups and chili.  This version on my turkey chili came about one day when I realized I didn't have any chili powder left.  Ricky gets tons of spices from work and I decided to try a new McCormick packet: Smoky BBQ Chili.  I wasn't sure about the BBQ combination, but it turned out SO tasty.  All winter I've switched up my recipe to this one!  

The Smoky BBQ packet gives it a little sweetness and the heat level is mild, so perfect for kiddos.  I made one batch with poblanos and green chilies, instead of bell peppers and it had MUCH more heat. It's nice you can adjust the chili to your preferences.  The smoky flavor isn't overwhelming--just enough in the background.

This recipe uses Jennie-O lean ground turkey, since we don't eat much beef--but feel free to substitute whatever you have on hand! Even add lentils or extra beans instead of the meat for a veggie version! We serve our chili with plenty of toppings and coconut oil cornbread.

While I don't mind chopping, when you're trying to get a meal on the table, it's nice to use some help! I was sent this Hamilton Beach Stack + Snap food processor last fall and it's been a game changer.  It literally takes 5 seconds to chop up veggies for a meal. There is a huge opening on the top, so all you have to do is cut items in half or seed the peppers.  I also have been buying blocks of cheese and shred them with the attachment.  Saves some money! You'll have a chance to win one of your own, too!

Smoky n' Sweet Turkey Chili
Here's what you need:

  • 1 package of lean Jennie-O Turkey
  • 2 medium onions, or 1 large, chopped 
  • 1 cup peppers, chopped: green, poblano or banana (perfect use for markdown peppers!)
  • 2 cans chili beans
  • 2 cans diced tomatoes
    • If you like super thick chili, use 1 can of tomato paste, too
  • 1- 4oz can diced green chiles (optional)
  • 1 tablespoon oil
  • 1 teaspoon Worcestershire sauce (my secret go-to ingredient!)
  • 1 teaspoon cumin
  • 1 packet McCormick Chili spices in Smoky BBQ
  • Favorite Toppings! Ideas: avocado, cilantro, tortilla chips/Fritos, cheese, green onions, oyster crackers.
  1. Heat large pot over medium heat.  Add tablespoon oil and chopped veggies.  Stir and cook 2-3 minutes.  Add ground turkey.  
  2. Stir and break up turkey while it's cooking.  Once no longer pink, add Worcestershire sauce, cumin and chili seasoning packet.  Stir until mixed through.  If you want thicker chili, add can of tomato paste now.
  3. Slowly add each can of chili beans and diced tomatoes.  Allow to bubble for at least 15 minutes on low heat.  Stir frequently to make sure nothing is sticking to the bottom.  
  4. Serve over macaroni noodles, on a chili dog or in a big ol' bowl with toppings!  I love to make baked chips and scoop them in. 
This freezes well, just put in cup sized portions for future lunches!

If you're going to be a bargain shopper, you HAVE to know about store markdowns.  I know many people stay away from them because they don't know how to use them or they are afraid the food is bad.  Well, being honest, sometimes the food can be bad.  You have to know what to look for!  Also, if the item is perishable, how to store it so it's worth the money you saved.

One of the best gifts we ever got was a large standing freezer for our basement.  We have a pretty tiny fridge and we were shopping all of the time because we couldn't store much.  After getting the freezer, we were able to save so much more money!  It's an investment, for sure, but there are many ways to find freezers under $300...even cheaper on Craigslist.  Note: if you do find one online, make sure it's a newer appliance (under 10 years) or you will be paying extra on your utility bills!

Before I purchase anything in a store, I check out the markdown areas.  At Meijer, they have a rolling markdown produce cart and one for discounted bakery items.  In the aisles, you can find markdown items labeled with large orange stickers--think dented cereal boxes, etc.  Always stay away from dented cans, but crushed boxes are usually okay, just give them a quick inspection.  

Other stores will use a grocery cart for produce markdowns and use aisle endcaps for clearance items. Target has amazing food clearance!  Remember, most items you can still use coupons on--so stock up if it's something you'll use.  If you are at your local store and don't see any markdowns, it never hurts to ask!

Markdown Meat, Saving on Meat, Budget Shopping

Meat markdowns save you the most money, but you have to know what to look for.  First of all, check the price per pound. Is it really a great deal?  For instance: my set chicken markdown price is always $0.89 or less per pound.  If I see markdown chicken thighs, but they're $1.19/lb, that's not a good deal for us because I know they frequently go on sale for $0.99...unless we really need them for dinner.  

Next, check for any discoloration.  If you see brown spots on ground turkey, put it back.  Also, if you can smell it, put it back.  GROSS.  Most stores are pretty good about not keeping bad meat, but some can be sneaky.  No bueno!

Look for higher priced items like steaks, roasts and whole chickens on markdown and always check if there are any coupons to use, also! I like to find Johnsonville sausages on price cuts since there are always coupons. 

Most important: you must use or freeze the meat the day you buy it.  I usually set up a cutting board and baggies when I get home and portion out any meat when I get home from the store.  Don't forget to LABEL it with a date and what it is!  Nothing is worse than a funky block of frozen mystery meat!  Experiment with different marinades before freezing, too.  

Recipes I love for markdown meat:
Don't fear produce markdowns! Unless you see mold, it's a great way to save.  I love brown bananas for bread and to freeze for smoothies--just remember to always peel them before freezing them.  

What to look for: Peppers, zucchini, apples, strawberries, potatoes, onions and oranges. Broccoli and cauliflower are hit or miss, be sure to look for mold.  Pre-packaged items can be marked down too: salad mix, mushrooms, pea pods, shredded carrots and more.  With salad mix, if you can't use it that day, pass.  Spinach and kale can be frozen for smoothies or stir-fry.

Budget Shopping, Dairy markdowns, Grocery Markdowns
Dairy markdowns can be hit or miss.  I know many people say it's okay to freeze milk, but I just don't bother--it takes up too much space and seems a bit funky to me.  One milk I DO freeze is buttermilk.  If I find it on price cut, I pour it in ice cube trays for waffles or marinades.  Yogurt is a no-brainer for us because we fly through it every day.  

Random items you may find on markdown:
  • Wine! After Christmas, many holiday box sets are cheap too! If you're in Grand Rapids, Russo's has great beer markdowns, usually $3.99 for a 6-pack.
  • Nuts.  Especially now, after holiday baking seasons, large packages of nuts go on sale.  I found pecans, cashews and almonds for 70% off--just be sure to freeze them or the oils will make them rancid.
  • Bakery leftovers. Each time I visit Walmart, I get 2-3 loaves of day old bread.  It makes the best garlic bread, bread crumbs and the Everything style is perfect for appetizers.
Don't forget about the Aunt Millie's thrift store! We buy our sandwich bread, buns, bagels and pitas there for a fraction of grocery store prices.
