I'm always pretty adventurous with adding different ingredients to salsa, but I forget to switch up guacamole.  Being honest, I could eat guacamole every.single.day.  In the summer, when avocados are super cheap, I pretty much do!

Fun Dips: Faux Cookie Dough

I have a major cookie dough addiction.  I know, I know...you're not supposed to eat raw eggs.  But I cannot resist dipping a spoon in any type of batter while baking.

When I came across this recipe in Family Fun magazine last April, I was hesitant.  Chickpeas? Oatmeal? That will NOT taste like cookie dough!  But I'm all about beans, I had to test this out with the girls. Let me tell you this: the girls LOVED this dip.  They think Mama has gone crazy and is letting them have an indulgent treat.  Little do they know, this is a HEALTHY cookie dough. Ha! #MomWin!

Here's what you need:
  • 1 can chickpeas, rinsed and drained (also labeled Garbanzo beans)
  • 6 tablespoons brown sugar
  • 1/4 cup natural peanut butter (or your favorite PB alternative)
  • 3 tablespoons old fashioned oats
  • 1 tablespoon milk
  • 2 teaspoons vanilla
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda 
  • 1/2 cup mini chocolate chips
  • Dippers: apples, pretzels, fingers (hehe)
  1. In a mini chopper, mix together all ingredients except mini chips.
  2. Blend until smooth. Taste and add extra vanilla, if necessary. 
  3. Fold in mini chips.  Refrigerate for 30 minutes before serving.

Summertime go-to dip: Spinach & Feta

I am loving this weather!  Aside from yesterday, it has been perfect weather to lounge around outside while the girls play.  I love just watching them on the patio while they march around the backyard playing various games.  It's so interesting to watch Gabby interact with them.  I cannot believe she is almost 2!  Gabby copies everyone and is talking up a storm now...she also chows on sand and dandelions.  So gross!

I've posted this dip before, but I have spruced it up a bit with some Greek yogurt.  I seriously could eat this daily with some carrots or Wheat Thins.  It's an old Weigh Watchers recipe, but no one has to know that! 

Sitting outside with some ice tea, I can munch on this dip.  The girls like it on their turkey wraps too. 

Weight Watchers Dips, Spinach Dip, Feta Dip, Healthy Dips, Spinach


Here's what you need:
  • 1/2 cup Feta cheese: I really like the Mediterranean style
  • 1/2 cup 0% Greek yogurt
  • 1/2 block of low fat cream cheese
  • 3 large handfuls of fresh spinach (I tend to use a whole small bag)
  • 4 green onions,chopped
  • Lemon juice, from half of a lemon
  • S&P to taste
This is so simple to make. 

  1. Blanch spinach quickly in boiling water (2-3 minutes) and then ring out water with a strainer.
  2. Combine everything in a chopper (or blender) and it's ready in less than 5 minutes!
