Monday starts t-ball for the twins, which is twice a week. Ricky has softball, I'm trying to run once a week with my Twin Moms group...yada yada. To sum it up: our summer is going to be BUSY. There are many nights in the past month where we needed simple and quick meals that are healthy.
My #1 "oh-no, we have to eat dinner NOW" meal to is breakfast for dinner, but that gets boring really fast. To get us geared up for summer chaos, I've been stocking up our freezer with basics to help my meal planning process: frozen veggies, brown rice, pizza crust, pre-marinaded chicken breasts, etc. One of our favorite new additions is EVOL foods! I initially tried their meals because they had a cash back deal on Ibotta (a grocery shopping app) from Meijer and have fallen in love since. Their frozen meals have ingredients you can pronounce AND they're quite healthy.
Our new favorite quick meal is EVOL burrito "chimis". They are lightly browned in a pan, not deep fried and they seriously taste like a Mexican restaurant meal for a fraction of the price. We all have our own burrito flavors we prefer and this meal hits the table in 20 minutes, or less. I like to serve with a quick Mexican rice and an avocado/tomato salad.
The EVOL website has tons of fun ways to prepare their burritos--this chimi idea caught my eye. We've also grilled them on the Foreman grill, which makes them super crispy. Obviously, you can quickly microwave the burritos and they're still super tasty!
EVOL Burrito "Chimis"
Here's what you need:
- EVOL burritos in your favorite style (the BIG chicken is ah-mazing!)
- Canola oil
- Sides: Mexican rice, salad
- The night before (or 3-4 hours beforehand), take the burritos out of the freezer. They can defrost safely in the refrigerator.
- Make rice first. Heat a large pan over medium heat and put about 4 tablespoons of oil, enough to cover the bottom of the pan.
- Cook the burritos in the microwave, as directed. Since they're not frozen, they cook quickly!
- Place the burrito seam side DOWN and cook until brown--about 3-4 minutes. Flip and repeat.
- Serve immediately with side salad and rice.
Ricky LOVES enchilada sauce, so he likes to top his Big Spicy Steak burrito with sauce and cheese. We call this "Ricky style".
Next time you're at Meijer, be sure to check the freezer aisle for EVOL foods. Aside from burritos, they have quesadillas, ravioli, frozen dinners and even breakfast items! Everything follows their motto "food should have FOOD in it". The ingredient lists are short and sweet and each meal is filled with tasty food. There are no artificial flavors, colors, additives, preservatives or fillers. Woohoo! Also, their chicken, beef and pork are raised in the USA without the use of antibiotics. Flavors are bold and everything is on the healthier side. Needless to say, we are HUGE fans.

I LOVE their truffle mac and cheese. It's a little pricier so we don't buy it often, but we can always manage to find coupons for the burritos :)
I have yet to find that--it's on my list though! I have found many of the frozen meals have $2 off coupons attached! I was so excited.

I had the big chicken one and it lasted TWO meals! Ricky's steak one was spicy, but SUPER tasty!
