Mmmm Monday: Strawberry Coconut Protein Pancakes #StonyfieldBlogger

Have you noticed the new Stonyfield Organic Protein OP  drinks in the dairy section?  Three flavors are available: chocolate, strawberry and vanilla.  Strawberry is hands down my favorite! Each drink has 15 grams of protein and NO GMOs, artificial sweeteners or hormones. The drinks alone are super tasty, especially after a workout, but they're great to cook with too!



When it comes to breakfast, pancakes are hands down my favorite! When I'm making them for the family, I like to add extra nutrients in them to make the pancakes a bit healthier: flax seeds, especially! This week, we had a huge container of strawberries to get through, so I figured we would try something new! I had some Strawberry Organic Protein left and it turned into a milk replacement in my pancake mix.

Protein is so important in a healthy diet and I love to add it whenever I can!

Strawberry Protein Pancakes
Here's what you need:

  • 2 cups Whole Wheat pancake mix (NOT complete)
    • The Aldi Simply Nature one is SO tasty!
  • 1/4 cup Coconut oil
  • 1/4 cup of flax seed, optional
  • 1/2 cup unsweetened Apple Sauce
  • 1/2 cup Stonyfield Strawberry Organic Protein
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup Unsweetened Coconut flakes
  • Fresh strawberries for topping
  • Maple or Pancake Syrup
  1. Toast coconut flakes on a dry pan over low heat until caramel in color.  Set aside in a bowl.
  2. In a large bowl, mix dry pancake mix, flax seeds, apple sauce and OP.  Mix, until no lumps are left.  Fold in vanilla and cinnamon.
  3. Preheat a skillet to medium heat.  Spray with Pam.
  4. Pour 1/4 cup of pancake mix for each pancake and sprinkle with coconut flakes.
  5. Flip once bubbles are at the top and remove from heat when brown. 
  6. When ready to serve, top with fresh strawberries and syrup, if desired.
