Being honest, I really don't like ribs. It's about the bones--I hate gnawing away feeling like a caveman. Ricky and Olivia, on the other hand, love ribs and wings. I've had to leave the room while Olivia was eating because she grossed me out so much!
I accidentally bought Country Style ribs once thinking it was a roast (hey....I was shopping with kids) and they have been our favorite ever since. They're cheap, too! I put a quick rub on, squirt some mustard on them and let the meat slow cook all.day.long. When it's time for dinner, just throw them on the grill with some BBQ sauce.
For a party, these are nice because you can slice up the ribs for serving. There's nothing worse than trying to eat a messy food at a gathering, especially ribs! These make BBQ a bit more party friendly.
Slow-Cooker Country Style Ribs
What You Need:
- Boneless Country Style pork ribs
- For serving, expect about 1/2 lb per person--they cook down
- 1/4 cup BBQ seasoning for rub
- I recommend McCormicks Grill Mates seasonings
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Onion Powder
- 2 tablespoons apple cider vinegar
- 1/4 cup yellow mustard (my secret ingredient!)
- 1 large onion, sliced
- BBQ sauce for basting on the grill

Let's Cook!
- Set your slow-cooker on low for 8 hours. They may cook faster, depending on how quickly your cooker, well, cooks. I have 3 and each one cooks at a different rate. Rather annoying, but just adjust the time accordingly.
- Mix all spices together in a bowl. Pat the country ribs dry and rub the spice blend on the ribs. Be sure to get all sides of the meat.
- In the bottom of the slow cooker, add the onion and apple cider vinegar. Place ribs on top.
- On the very top, spread mustard. Cover and don't touch!
- Once the ribs are tender, almost falling apart, remove from slow cooker.
- On an outdoor grill, heat on both sides (2-3 minutes). Last minute add your favorite BBQ sauce!
- To serve, thinly slice and serve with a side of extra BBQ sauce, if desired.
